Grandma’s chocolate cookies to feed the greedy grandchildren at breakfast. It is a very popular recipe with an infinite number of variations, starting with the use almonds or hazelnuts or pine nuts instead of walnuts. In any case the final result is the same: they are always very good.
For 28-30 biscuits


  • 150 g of walnuts
  • 180g of sugar
  • 180 g tablet of bitter dark chocolate
  • 30 g flour 00
  • 2 eggs
  • cinnamon stick


  1. Break up the chocolate bar and undo it finely with a blender along with the nuts and a piece of cinnamon stick (the equivalent of one teaspoon of cinnamon powder)
  2. Whip as firm as you can the two egg whites with a pinch of salt (preferably with an electric mixer) and then add in the sugar little at a time, always beating
  3. Combine the egg whites to the other ingredients, carefully sifting the flour, and stir, mixing everything well. It should be a rather hard  dough
  4. Shape into balls the size of a walnut (wet your hands with cold water to prevent them from sticking) and place on a baking sheet lined with parchment paper, outdistancing each other by about 4 cm (remember there’s no yeast, so the balls will tend to be low and  widen)
  5. Bake at low heat (130 ° C) and bake until the biscuits’ surface starts to harden and crack
