Cold Sicilian Omelette

Typical Sicilian dish, is very good both hot and cold. It is served with a slice of toast.


  • 8 fresh eggs
  • 2 medium-sized onions
  • 100 grams of soft cheese
  • 16 basil leaves
  • pepper
  • extra virgin olive oil


  1. Finely chop the onion and fry with the oil over very low heat, then remove from heat and let it cool
  2. Dice the cheese and chopped basil / In a bowl beat the eggs with little salt and freshly ground pepper
  3. Add the basil and cheese to your taste (in Sicily sheep is used)
  4. Add a little more oil in the pan, raise the temperature and pour the egg mixture, stirring quickly with a wooden spoon
  5. Cover the pan and let it cook over low heat, then flip the omelette and finish cooking on the other side
