PORK LOIN WITH ORANGE

Good meat main course of great impact. A piece of pork that is not too lean will result in a softer, tastier roast. The best oranges are red tarot, but you can use any type provided they are mature. Indeed, if you’re in the mood for experiments, this roast is also great if you replace the oranges with a nice pink grapefruit.

INGREDIENTS

  • 800 grams of pork loin
  • 3 oranges
  • 2 garlic cloves
  • 70 g butter
  • 1 teaspoon oregano
  • extra virgin olive oil

PREPARATION

  1. Grate the zest of 2 oranges and then squeeze their juice
  2. Mix zest and juice with chopped oregano and garlic
  3. In a baking pan, melt the butter with 4 tablespoons of oil, place the pork on it and brown it quickly on each side over high heat
  4. Sprinkle the pork with the orange sauce and a pinch of salt and bake at 180 ° C for about 40 minutes, turning a few times
  5. Add half of the last orange cut into slices and cook for 10 minutes at 200 ° C
